    Savory Stuffing:

You can also make your own with dry bread crumbs and seasonings of sage, garlic salt, olive oil and bake for 20 minutes at a low heat until hard and toasty.

    Sweet Stuffing Varieties:

If you enjoy apples and apricots in the dressing, use Sparkling Cider for the liquid…The neatest thing is that you can use just about anything that your family likes in a bread stuffing. It can be corn bread and cranberries, sweetened with orange juice concentrate to taste , and cooked down a little for the berries flavor to meld. Anyway the sky is the limit! Several cups of wild rice works well too. And of course you could put in everything together to make it either savory or sweet.

Bev’s stuffing is somewhat different each time, because sometimes she uses fresh grapes and other times yellow raisins, apples, celery and cashews or pecans. I always use nuts of some kind.

The dry ingredients are put into a large bowl for stirring later.

VIDEO RECIPE INSTRUCTIONS


Pumpkin Prep: You need a good sharp knife. The pumpkin will be very tough, but one you get it cut, it will be just right for stuffing. After you clean out the pumpkin, bake the seeds 20-25 minutes with a little olive oil and garlic salt at 200 degrees.

Wash the pumpkin thoroughly and salt a little a put in the oven and let it bake while we prepare the stuffing. Pumpkins are very stringy, so you need a good strong spoon to get everything clean inside the pumpkin. Doesn’t have to be pristine, but get the strings and seeds out. Get a pumpkin that can fit into your oven. Place pumpkin on a cookie sheet to bake.

Bake out stuffed pumpkin with some foil over the open space about 1/2 hour at 350 degrees. Do not overcook the pumpkin! Also, bake the pumpkin with stem wrapped in foil for about 15 minutes while you make the stuffing so “hot” will go into “hot.”

Stuffing Prep: In the video, Bev is using pre-packaged stuffing. In a bowl, add the stuffing, chopped onion, chopped celery, chopped apples, raisins, pecans and veggie meat chunks (Nuti-Loaf by Cedar Lake). Bev uses a product in the video which is no longer available, but Nuti-Meat is very similar product you will enjoy. You can also substitute with other veggie meat products. See resource list below. Also chop things on the large side instead of small pieces. Saute chopped ingredients in a little olive oil. Add a little salt. Don’t sauté too long. We want to have a crispiness to the chopped ingredients, such as the apples, celery, onion, and pecans. Bev uses a variety of nuts. This time she is using pecans, but she has also used cashews, walnuts and almonds.

Put lightly sautéed chopped ingredients into bowl with dry stuffing ingredients. Add vegetable-based chicken-like stock while mixing everything together. Add enough vegetable stock to moisten adequately. Bev uses two approximately 15 oz. cans. Add the stuffing to the pumpkin and put the pumpkin lid on the pumpkin.

You can choose to bake out the pumpkin with the stuffing. To bake it on out, it takes the about the amount of time it would take for you to get your dinner prepared, like getting the potatoes mashed, etc… It doesn’t even really need to be cooked because there is no meat and everything has been pre-cooked.

In the video, Bev does not bake out the pumpkin with the stuffing.

Decorating: When ready to decorate and stuff, take the pumpkin and place it on a nice platter. The pumpkin should be nice and hot, filled with the stuffing, and having the pumpkin lid in its place.

Next, decorate the pumpkin. Place lots of parsley around the base of the pumpkin. Then add flower cut bell peppers and lemons. Can substitute with tomatoes and mandarins. Add also, small bunches of red grapes, and finally flower blossoms. Note: If pumpkin is full and you have a large gathering, you may want to make another stuffing recipe and make a casserole with it for extra food.

  • cooked wheat berries…sautĂ©ed in olive oil, 2 tbsp more or less

Please note the video calls for Nuteena, a product which is no longer available. Cedar Lake however has a product very similar to Nuteena which is called Nuti-Meat.

XXXHEALTHY HOLIDAY DESSERT
Left: Serve a simple and health dessert with your meal. This dessert includes diced fresh fruit on top of Belgium waffles and placed on a pretty platter. Add a center of soy ice cream and soy whipped cream dollups on the side. Drizzle carbo syrup over the top, and sprinkle pomegranate seeds on top of it all. And last of all, add a candle and light it. Wow!


Note: This dessert was actually served for a Christmas brunch as the 3rd course of an Olde English breakfast, but you could fudge a little and use it for Thanksgiving, Christmas, or both. Just change the decor for the occasion.
